Rainbow Cookies

When I was a kid we didn’t have Rainbow Cookies. We had Seven Layer cookies. Cause they have seven layers.
I heard Italian Flag cookie, but we never called them that either. They were colored after the colors of the Italian flag though.
That part is true. Tricolor cookie? That never stuck either. But Rainbow Cookies, everybody liked that one.

While they are colored red, white (yellow) and green, we can use any colors we want. That’s the beauty of making them yourself.
I like to do red, white and blue in the summer, some Autumn colors in the fall, maybe red and orange. Goes nice with the brown chocolate.

INGREDIENTS

  • 4 Eggs
  • 2 Sticks of Butter (Softened)
  • 6 Teaspoons of Almond Extract
  • 1 Cups of Flour
  • 1 Cups of Sugar
  • 1 Teaspoon Baking Powder
  • Red, Yellow and Green Food Coloring
  • Dark Melting Chocolate (2 Pounds) 1 For Top
  • Layer and 1 For Bottom Layer
  • Apricot Preserves or Seedless Raspberry Jam
  • (1 Large Jar) 18 oz. For Two Layers
  • Large 13" X 18" Pan with a 1 inch lip
  • Parchment Paper or Waxed Paper (Parchment Paper works Best)
